The oyster can filter as much as 50 gallons of water a day. In the process it removes chemicals and pollutants leaving clean water behind. As the water clears, plants can thrive on the floor of the sea. Oyster beds also act like coral reefs in that they provide habitat for young, free floating larval oysters, and protection for shrimp, crabs, and other small or young species. In the Indian River Lagoon in Florida, oyster gardening is helping to restore the lagoon.
